I met with her last week and she showed me pictures of a recent wedding she did that had a traditional tea ceremony. I think she has done a couple ones. I think it is fine to hire a non-Asian photographer, only because I'm having a Christian church wedding. However, the chinese banquet will be different. More tables, family style meals, etc. From my impression of her, she seems to know what she is doing and will accomadate with what you want. (non obtrusive, etc.)
